Recipe | {Reese's Pieces} Peanut Butter Frosted Cupcakes



Put Your Kids to Work in the Kitchen!

Perfect for your kids (or grand kids), these cupcakes scream summer fun! This project will entertain bored children all afternoon ... first to shop for the Reese's Pieces and the other ingredients, and then to mix up the batter, bake, and frost them.

You might even stretch this kitchen activity out to tomorrow.
Why not suggest they sell some of their Reese's Pieces creations around the neighborhood? (Warning: these cupcakes won't last very long!)

This recipe calls for enough cake mix to prepare two dozen chocolate cupcakes. Directions for the peanut butter buttercream frosting
is below.


Frosting Ingredients

8 oz (1 cup) of cream cheese
1/2 stick of unsalted butter
4 cups of confectioner's sugar
2/3 cups of peanut butter

Directions

1. Leave your cream cheese and unsalted butter out for 1-2 hours so they are at room temperature before you begin.

2. Combine cream cheese and butter with a hand or stand mixer
(see tangerine-orange)
until until well blended.

3. Add half the confectioner's sugar (2 cups) to the cream cheese-butter mixture. Add the remainder of the confectioner's sugar (2 cups) to your bowl, mixing well.

4. Add the peanut butter to the mixture and blend buttercream until smooth. Spread or pipe the frosting onto the top of the cupcakes. Decorate with orange, yellow, and brown Reese's Pieces.

I tried this recipe! Well, to be completely honest I cheated on the cupcake itself and used a box mix (don't judge!!) :-) But I did make the peanut butter frosting and oh.my.goodness!!! It was divine. I sent some of the cupcakes over to my neighbors, and sent a dozen cupcakes to my husband's work (the ladies there could not stop eating them!). So very delicious!
